For Doppio Passo a half of the vines are harvested in the second or third decade of August and vinified traditionally. The rest matures further 3-4 weeks on the vine. This second half of the "ripassare" or "re-crossing" occurs, so the fermentation with the pomace of the first harvested in August Primitivo. This second fermentation gives the wine more intensity, richness and character.
